What do VS, VSOP, and XO mean on cognac labels?

These designations indicate minimum aging: VS (Very Special) is aged at least 2 years, VSOP (Very Superior Old Pale) at least 4 years, and XO (Extra Old) at least 10 years. Many producers age well beyond the minimums.

Can I find small-producer cognacs in North Carolina?

How should cognac be served?
